Mussels with Crushed Tomatoes
Happy Fourth Of July Weekend! As I was cooking today to head to the beach for a sunset dinner with my sister's family and my neighbors I decided to take some pictures and just share this recipe.... Is that good and simple! I have been making this recipe for years... all year round. I know that there are many complicated versions of cooking Mussels but I always settle for simplicity. Nothing more satisfying that eating something deliciously fresh and not spending so much time in the kitchen.
-3lbs Fresh Mussels (De-bearded, rinsed)
-1 28oz. Diced Tomatoes
-3 tablespoon Olive Oil
-4 cloves Garlic, sliced
-1/4 cup Fresh chopped Parsley
-1 tablespoon Oregano
-Salt and pepper
French Baguette (lots of it!!!)
Directions:
1. Heat the oil in a large saute pan and add the Garlic over medium heat. Sauteed for about 3 minutes.
2. Add tomatoes, oregano, salt and pepper.
3. Add the mussels to the pan and allow to cook for about 10 minutes until all the mussels are open.
4. Add chopped Parsley.
5. Transfer mussels to a serving platter or for rustic look keep in large pan. (Discard any mussels that do not open.)
6. Keep baguette bread on a cutting board handy for dipping into the sauce
