EGGPLANT PARMIGIANA

I love the idea of cooking Italian any day and this very simple recipe is in thanks to the delicious 100% natural Jersey Italian Gravy. This dish can be created with the most minimal amount of ingredients and that is why it quickly became one of my Entertaining favorites. Is there anything with a more "yummy" aroma than tomatoes and mozzarella in the oven!
Most people are introduce to a jar of organic tomatoes in isle of the market; except for this special jar. One day my husband came home with great news... Our friend Carlos and wife had the clever idea to jar their  delicious Italian gravy from their pizzeria! (Available in Whole Foods and the full amazing story is the back of every jar).

1 Jar Jersey Italian Gravy
1 Large Eggplant
1 Lb. Mozzarella slices
1/2 Grated Parmesan
Salt and Pepper
Fresh Parsley
Olive oil

* Heat grilled skillet and cut the Eggplant in 1/2" slices. Season each disk with salt and pepper and drizzle olive oil; cook on grill skillet for 3-4 minutes on each side.
* Heat oven to 350 degrees and place slices of grilled eggplant on baking dish evenly apart. Add 1/4 cup of Jersey Italian Gravy to each slice and sprinkle 1 table spoon of grated Parmesan; top with mozzarella slice and repeat.
* Cook in oven for 25 minutes. Leaving the last slice of mozzarella until cooked in broil 4 minutes  until ready to serve. Sprinkle fresh chopped parsley.
